Will Taylor 's vision is to produce an exclusive range of premium Australian varietal wines, the equal of any in this country. To do that, he is relying on two basic truisms: great wine is made in the vineyard; and different grape varieties do better in different regions.

The concept is to select the classic grape varieties of Australia , sourcing them from vineyards that demonstrate a true sense of 'terroir' in the regions where they do best. They will then be made into wine by leading winemakers in the vicinity. The result is a series of superb examples of the regional wine styles of Australia.

Riesling 2003 (Clare Valley)

Pale yellow. Enticing, classic Clare Riesling nose of green apples, honeysuckle and a touch of fritz. Explosion of fruit on the palate, with lovely, soft, but clean acid, which lingers gracefully. Apple, lemon and lime are the flavours.

 
 

Semillon 2002 (Hunter Semillon)

 
  Showing the classic characters for such a wine of cumquats and lemons. The palate is fruity, but subtle and elegant. Lovely peach and apricot flavours flesh out a steely spine of lemon and grapefruit. Soft, lanolin mouth- feel, with a persistent finish of both fruit and acid.  

 

Pinot Noir 2001 (Geelong/Yarra Valley)

 
  Ruby red colour. Slightly dusty nose of red cherries, violets and red meat. The palate is a complex concoction of cherry fruit, mocha, toffee and tea characters. Continues to develop more complexity as it continues to age. 

 

Cabernet 2003 (Coonawarra)

 
  The nose shows blackberry, cassis and tobacco, with classic Coonawarra mint and eucalyptus notes. The flavours evident on the nose build in the mouth, and the wine finishes with fruit and acid in harmony with dusty tannin in support.
